Fall is the perfect time to make delectable treats, fill your home with a sweet, delicious aroma. Here are three of my favorite fall recipes you can try at home. 

 

Pumpkin Spice Cupcakes

Autumn is notorious for Pumpkin Spice Lattes but just wait until you try these scrumptious cupcakes. They take about an hour and a half to prepare, cook, cool, and make 24 cupcakes.

Ingredients

  • 2 ¼ cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cloves
  • ½ teaspoon ground allspice
  • ½ teaspoon salt
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ cup butter, softened
  • 1 cup white sugar
  • ⅓ cup brown sugar
  • 2 eggs, room temperature
  • ¾ cup milk
  • 1 cup pumpkin puree

Cinnamon Cream Cheese Frosting

  • 1 (8 ounce) package cream cheese, softened
  • ¼ cup butter, softened
  • 3 cups confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Directions

  1. Preheat an oven to 375 degrees F (190 degrees C). Grease 24 muffin cups, or line with paper muffin liners. Sift together the flour, 1 teaspoon cinnamon, nutmeg, ginger, clove, allspice, salt, baking powder, and baking soda; set aside.
  2. Beat 1/2 cup of butter, the white sugar, and brown sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add the room-temperature eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Stir in the milk and pumpkin puree after the last egg. Stir in the flour mixture, mixing until just incorporated. Pour the batter into the prepared muffin cups.
  3. Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 25 minutes. Cool in the pans for 5 minutes before removing to cool completely on a wire rack.
  4. While the cupcakes are cooling, make the frosting by beating the cream cheese and 1/4 butter with an electric mixer in a bowl until smooth. Beat in the confectioners' sugar a little at a time until incorporated. Add the vanilla extract and 1 teaspoon ground cinnamon; beat until fluffy. Once the cupcakes are cool, frost with the cream cheese icing.

 

Pumpkin Bars

Pumpkin bars might be my absolute favorite Autumn treat because it is just like cake... but better. This recipe has 24 servings and only takes 45 minutes to prepare and cook.

Ingredients

  • 4 large eggs
  • 1 ⅔ cups white sugar
  • 1 cup vegetable oil
  • 1 (15 ounce) can pumpkin puree
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt

Frosting:

  • 1 (3 ounce) package cream cheese, softened
  • ½ cup butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups sifted confectioners' sugar

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, mix the eggs, sugar, oil, and pumpkin with an electric mixer until light and fluffy. Sift together the flour, baking powder, baking soda, cinnamon, and salt. Stir into the pumpkin mixture until thoroughly combined.
  3. Spread the batter evenly into an ungreased 10x15 inch jellyroll pan. Bake for 25 to 30 minutes in preheated oven. Cool before frosting.
  4. To make the frosting, cream together the cream cheese and butter. Stir in vanilla. Add confectioners' sugar a little at a time, beating until mixture is smooth. Spread evenly on top of the cooled bars. Cut into squares.

 

 

Autumn Cheesecake

This has to be my favorite recipe, it combines my favorite flavors with my favorite dessert. There is nothing better than a creamy dessert that also happens to be cheese. This recipe takes a total of 4 hours to complete and yields 12 servings.

Ingredients

  • 1 cup graham cracker crumbs
  • ½ cup finely chopped pecans
  • 3 tablespoons white sugar
  • ½ teaspoon ground cinnamon
  • ¼ cup unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • ½ cup white sugar
  • 2 eggs
  • ½ teaspoon vanilla extract
  • 4 cups apples - peeled, cored and thinly sliced
  • ⅓ cup white sugar
  • ½ teaspoon ground cinnamon
  • ¼ cup chopped pecans

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). In a large bowl, stir together the graham cracker crumbs, 1/2 cup finely chopped pecans, 3 tablespoons sugar, 1/2 teaspoon cinnamon and melted butter: press into the bottom of a 9 inch springform pan. Bake in preheated oven for 10 minutes.
  2. In a large bowl, combine cream cheese and 1/2 cup sugar. Mix at medium speed until smooth. Beat in eggs one at a time, mixing well after each addition. Blend in vanilla; pour filling into the baked crust.
  3. In a small bowl, stir together 1/3 cup sugar and 1/2 teaspoon cinnamon. Toss the cinnamon-sugar with the apples to coat. Spoon apple mixture over cream cheese layer and sprinkle with 1/4 cup chopped pecans.
  4. Bake in preheated oven for 60 to 70 minutes. With a knife, loosen cake from rim of pan. Let cool, then remove the rim of pan. Chill cake before serving.
